I tried making Aloo Gobi for my Indian parents
Ingredients
- Potato1 lb
- Cauliflower1
- Vegetable oil5 tbsp
- Salt1 ½ tsp
- Black pepper · cracked
- Cumin1 ½ tsp
- Cinnamon stick1
- Onion1
- Garlic6
- Ginger1
- Turmeric · ground½ tsp
- Asafoetida¼ tsp
- Mango powder1 ½ tsp
- Coriander seed · ground2 tsp
- Chili powder½–1 tsp
- Serrano pepper1
- Tomato2
- Fenugreek1 tbsp
- Garam masala½ tsp
- Vegan butter1 tbsp
- Cilantro1 handful
- Lime
Instructions
- Preheat the oven to 425°F, with racks in the top third and bottom of the oven.
- Scrub the potatoes (no peeling) and cut into 1-inch cubes. Cut the cauliflower into small-to-medium florets.
- Spread the potatoes in a single layer on a parchment-lined sheet pan. Drizzle with 1 tablespoon oil and season with a few pinches of salt and pepper.
- Put the cauliflower on a second sheet pan, drizzle with 1½ tablespoons oil, rub it into the florets and season with salt and pepper.
- Put the cauliflower on the top rack and the potatoes on the bottom. Bake both 22 to 25 minutes without flipping, until browned in spots and tender but not very soft.
- Meanwhile, heat 2½ tablespoons oil in a 12-inch deep sauté pan or Dutch oven over medium-high heat until shimmering. Add the cinnamon stick and cumin seeds and toast 1 to 1½ minutes, stirring often, until darker and fragrant.
- Add the onion with a pinch of salt and cook 7 to 8 minutes until well browned.
- Add the garlic, ginger, turmeric and asafoetida (if using). Cook 1 to 2 minutes, stirring constantly.
- Add the amchur (if using), coriander, chile powder, serrano pepper, tomatoes, salt and some black pepper. Lower the heat if the spices stick. Stir, scraping up browned bits with the tomato juice, and simmer 4 to 5 minutes until the tomatoes have softened, almost melted, and oil separates from them.
- Add the roasted cauliflower and potatoes with any browned bits from the pans. Gently mix to coat and cook uncovered about 5 minutes, tossing occasionally, until coated and tender but not soggy. Lower the heat if it sticks.
- Crush the kasuri methi in your hands and add it with the garam masala and butter (if using). Toss briefly until the butter melts. Turn off the heat and rest 5 minutes.
- Chop the cilantro. Stir it into the aloo gobi with a couple of squeezes of lime or lemon juice (more if you left out amchur). Season with salt and more garam masala to taste. Remove the cinnamon stick pieces.
