Instructions
- Blend the coriander and mint chutney: put cilantro, mint, ginger, green chilies, garlic, lime juice, salt, water and the slice of white bread into a blender and blend to your preferred consistency, adding water if it is too thick.
- Boil the yellow potatoes in water until tender. Keep the potato water, add the beets to it and simmer for one hour.
- Once cool, peel the potatoes and mash them a little in a bowl.
- Heat oil or ghee in a pot over medium-low heat and fry the mustard seeds for a couple of minutes, without burning them.
- Add the cumin seeds and curry leaves and fry for a couple of minutes.
- Add the mashed potatoes, turmeric and salt to the pot, mash and sauté briefly until the kitchen smells of spices.
- Make the chaat masala: grind the amchoor, tamarind, coriander seeds, cumin seeds, ajwain seeds and black salt in a coffee grinder.
- Make the sev: mix gram flour, masala, turmeric, salt and water into a soft, play-dough-like dough that is not firm.
- Push the dough through a homemade tool (a potato masher) into a pan of oil heated to 350°F, slowly.
- Fry until golden on one side, flip and fry the other side until golden. Drain and break into small pieces.
- Assemble: spread soft butter and herb chutney on bread, add masala potatoes, fresh cucumber, red onion and tomato, simmered beet, chaat masala, cheese, and top with sev.
