Ingredients

Instructions

  1. Heat the frying oil in a pot over medium heat until it reaches 190°C/375°F (a deep fryer also works).
  2. Warm the milk and sugar in a saucepan over medium heat, stirring with a wooden spoon until the sugar dissolves, about 2–3 minutes. Remove from the heat.
  3. Lightly whisk the 2 eggs in a separate bowl, add them to the milk mixture, then add the ricotta.
  4. Whisk the wet ingredients slowly until well combined, then stir in the 2 tsp vanilla extract.
  5. Sift the flour and mix in the 2 tsp baking powder, then add it to the wet mixture.
  6. Gently mix with a wooden spoon until smooth and no dry flour remains.
  7. Stir in the sultanas (½–1 cup, to taste) until spread evenly through the dough.
  8. Scoop about 4 tablespoons of batter (one ice cream scoop) and drop it into the hot oil.
  9. Once the fritters float, move them gently with a slotted spoon, then cook until golden on one side before turning to brown the other side.
  10. Fry 3–5 minutes until deep golden brown on both sides.
  11. Drain on paper towels.
  12. Repeat with the remaining batter.
  13. Dust with icing sugar and serve with honey.
