Ingredients

Instructions

  1. Line an 8-inch (20 cm) square baking dish with parchment and grease it with nonstick spray.
  2. Pulse the cookies in a food processor into fine crumbs, then mix with the melted butter until it looks like wet sand.
  3. Press the crumbs evenly into the dish.
  4. Prepare the cheesecake mix as the package says, spread it over the crust, and chill for at least 2 hours.
  5. Prepare the strawberry jello as the package says. Gently ladle half of it over the chilled cheesecake and chill until firm, about 90 minutes. Keep the rest of the jello aside.
  6. For the meringue, cook the sugar and water over medium heat to 240°F (115°C). Meanwhile, whip the egg white until soft peaks form, about 2 minutes. On medium speed, slowly drizzle in the hot syrup, then whip on high until stiff peaks form. Let cool slightly and transfer to a piping bag fitted with a tip.
  7. For the candy shards, line a baking sheet with parchment. Heat the sugar and water over medium-high heat to 295–300°F (145–150°C). Pour onto the sheet, tilt to spread thinly, and let harden about 2 minutes without touching. Crack into small pieces with a meat mallet or spoon.
  8. For the coulis, stir the jam and water together, then strain through a fine-mesh sieve.
  9. To assemble, lightly brush coulis across each plate, set a thin cheesecake slice in the center, and top with crushed wafers, crushed freeze-dried strawberries, raspberry candy, candy shards, small mounds of meringue, and toasted coconut. Serve immediately.
