I Try To Make Dry Pasta For The First Time (Orecchiette)

Ingredients

Instructions

  1. Make a well in the center of the semolina on the board.
  2. Add a pinch of salt, then the water. Work it with your fingers, gradually pulling in the flour as it absorbs.
  3. Knead by hand until the dough is smooth and velvety, about 10 minutes.
  4. Shape the dough into a round, cover it with a cloth and let it rest at room temperature for 30 minutes.
  5. Cut the dough into long sausages, one batch at a time, keeping the rest covered. Cut each sausage into chickpea-sized pieces.
  6. Using a butter knife, drag each piece toward you across the board, pressing it between the blade and the board to form a shell.
  7. Turn each orecchiette inside out with your finger.
  8. Dry them or cook them fresh.
