Ina Garten's 5-Star Niman Ranch Burgers Barefoot Contessa
Ingredients
- Ranch dressing · ground2 lb
- Dijon mustard1 tbsp
- Olive oil5 tbsp
- Salt2 tsp
- Black pepper · ground1 ½ tsp
- English muffin · halved3
- Mayonnaise
- Onion · peeled sliced2 lb
- Butter2 tbsp
- Thyme½ tsp
- Sherry2 tbsp
Instructions
- Build a charcoal fire or heat a gas grill.
- Put the ground beef in a large bowl, add the mustard, olive oil, salt and pepper, and mix gently with a fork without compacting the meat. Shape into 6 patties of equal size and thickness, about 3 1/2 inches across.
- When the grill is medium-hot, brush the grate with oil. Grill the burgers for 4 minutes, then flip and cook 3 to 4 minutes more, until medium-rare or more; cook longer for well done.
- Meanwhile, separate the English muffins and toast the 6 halves cut side down on the grill.
- Spread each muffin half with mayonnaise, top with a burger, then add a heaping tablespoon of caramelized onions. Serve hot.
- For the caramelized onions, heat the olive oil and butter in a large shallow pot, add the onions and thyme, and toss to coat. Cover and cook over medium-low heat for about 10 minutes to sweat the onions.
- Uncover and keep cooking over medium-low heat, stirring now and then, for 25 to 30 minutes, until golden brown. Lower the heat if they cook too fast.
- Add the sherry vinegar, salt and pepper and cook 2 more minutes, scraping up the browned bits. Taste and season well.
