Ingredients

Instructions

  1. Drain and rinse the white beans, shake off excess water, put them in a large bowl and mash well with a potato masher or fork.
  2. Add the breadcrumbs, chopped onion, chopped garlic, parsley, cumin and egg, season with salt and pepper, mix well, and press down until the mixture is paste-like.
  3. Squeeze a spoonful of the mixture in your hands to bind it, then shape into golf-ball-sized balls.
  4. Heat the olive oil in a large frying pan over medium heat.
  5. After a couple of minutes, add the bean balls in a single layer, spaced apart, and fry 8 to 10 minutes until golden all over. Remove and set aside.
  6. In the same pan at the same heat, add the chopped garlic and stir constantly for 30 seconds to 1 minute until fragrant. Add the paprika, thyme and red pepper flakes, stir briefly, then add the tomato sauce and vegetable broth, season with salt and pepper, and simmer.
  7. Simmer the sauce about 5 minutes until slightly thickened.
  8. Return the bean balls to the pan in a single spaced layer, turn each one over to coat, and simmer 2 to 3 minutes.
  9. Transfer the sauce and bean balls to serving dishes and top with chopped parsley.
