Ingredients

Instructions

  1. Preheat the oven to 350°F (177°C) and line baking sheets with parchment.
  2. Beat the butter and sugar until light and fluffy.
  3. Add the egg, egg yolk, sour cream, vanilla and almond extract and stir until fully combined.
  4. Whisk the flour, cornstarch, baking powder, baking soda and salt in a separate bowl.
  5. Add the dry ingredients to the wet on low speed until just well combined.
  6. Scoop 2-tablespoon (40 g) portions onto the sheets at least 2 inches (5 cm) apart. Roll smooth between your palms if you like.
  7. Bake in the center of the oven for 10-11 minutes.
  8. Right out of the oven, flatten each cookie gently with the bottom of a large measuring cup. Cool completely before frosting.
  9. For the frosting, beat the butter until smooth and creamy, then gradually add the powdered sugar on low speed until fully combined.
  10. Stir in the vanilla and salt, then add food coloring if using until the colour is even.
  11. Spread the frosting evenly over the completely cooled cookies and decorate with sprinkles if desired.
