Ingredients

Instructions

  1. Crush the biscuits or graham crackers into crumbs using a rolling pin in a large bag or bowl. Add the melted butter, brown sugar and salt, and mix until the crumbs absorb the butter.
  2. Put the blueberries, blackberries, lemon juice, water and sugar in a pan and heat gently for about 5 minutes, until the berries start to break down.
  3. Stir in the cornflour mixture and keep stirring for another 30 seconds until the berry mixture thickens. Turn off the heat and let it cool.
  4. Whisk the cream in a large bowl with an electric whisk until thick.
  5. Add the cream cheese, vanilla and confectioners' sugar, and whisk until combined. The mixture should be thick enough to hold its shape.
  6. Divide the cookie crumbs between 6 mason jars (200 ml / 7 oz each) and press down with the back of a spoon.
  7. Spoon or pipe the cream cheese mixture over the crumbs, then spoon the cooled berry mixture on top.
  8. Sprinkle with lemon zest and serve, or cover and refrigerate until ready to serve.
