Ingredients

Instructions

  1. Wash the potatoes and cut them in half, leaving the skin on.
  2. Boil the potatoes in a large pot of water over medium-high heat for 20 minutes.
  3. Cut the ham and mozzarella into small cubes.
  4. Let the potatoes cool slightly until still warm, then mash them with a potato ricer into a bowl and let them cool for 5 more minutes.
  5. Add the parsley, pecorino, salt, a generous amount of pepper and one egg to the mash. Mix with one hand until well combined.
  6. Wet your hands, scoop a portion of potato, flatten it and make a dent for the mozzarella and ham. Close it and roll into a log with square edges. Place on a tray lined with baking paper, and repeat until all are formed.
  7. Heat oil in a large pot over medium-high heat.
  8. Coat each croquette in beaten egg and breadcrumbs, making sure it is fully covered. Rest them to firm up; on a hot day, cover and refrigerate for 30 minutes.
  9. Fry five croquettes at a time for about three minutes, stirring gently, until golden brown.
  10. Remove with a slotted spoon and drain on paper towels. Repeat until all are cooked.
