Instructions

  1. Rinse the rice until the water runs clear and set it aside.
  2. Press Sauté on the Instant Pot, add the olive oil and onions, and sauté until translucent.
  3. Peel and cut the carrots into pieces and add them to the pot. Add the cubed beef.
  4. Add the steak spice, salt, cracked black pepper, cumin powder, coriander powder, garlic powder, chilli flakes, chilli powder, ginger and garlic paste and bay leaf.
  5. Mix well and sauté for 5 minutes, or until the meat has browned.
  6. Add the water and press Cancel.
  7. Secure the lid, set the vent to sealing and pressure cook for 45 minutes.
  8. Press Cancel and release the pressure.
  9. Add the rice without stirring, then spread it evenly with the back of a spoon.
  10. Cut the garlic head in half and place it cut side down in the centre of the pot.
  11. Secure the lid and pressure cook for 45 minutes.
  12. Do not press Cancel. Let it release naturally for 15 minutes, then press Cancel and release any remaining pressure.
  13. Discard the garlic or squeeze it into the pilaf for extra flavour, then mix thoroughly and plate.
  14. Garnish with parsley and serve once the beef is tender and the rice fully cooked.
