Instant Pot Cauliflower Soup (stovetop option)
Ingredients
- Cauliflower1 head
- Onion½
- Garlic4 cloves
- Bell pepper½
- Smoked paprika½ tsp
- Chili flake · flakes¼–½ tsp
- Allspice1
- Thyme · dried½ tsp
- Salt¾ tsp
- Nutritional yeast1 tbsp
- Cashew milk1 cup
- Basil
Instructions
- Blend the cauliflower, onion, garlic, red pepper and 1.5 cups water or broth until smooth, then add to the pot. (Or, to start, sauté the onion and garlic in 1 teaspoon oil until translucent, then add the blended cauliflower or the florets, chopped pepper and broth.)
- Add the spices, herbs, salt and nutritional yeast, and mix well. Close the lid and pressure cook on high for 14 minutes.
- Let the pressure release naturally. Open the lid, stir in the cashew milk, then press Saute, cover and cook 4 to 5 minutes. Use a well-fitting lid, as the soup splashes while boiling.
- Taste and adjust the salt, flavour and spice. Add chili blend or sweetener if needed, and more broth if you want it thinner.
- Serve with toppings of your choice.
