- Peanut oil1 tsp
- Eno1 tsp
- Black pepper · crackedto taste
- Chili powdera pinch
- Cilantro1 cup
- Ginger1 inch
- Peanut · roasted1 tbsp
- Cumin¼ tsp

Instructions
- Make the batter: in a large bowl, mix equal amounts of coarse rava and sour curd. Add water, ginger and green chilli paste, sugar and salt, and whisk to a smooth, flowing batter. Cover and rest for 10–15 minutes.
- Meanwhile, make the green chutney (see step 9 onward).
- Fill the steamer with water, cover, and heat it on the gas. Preheat it fully before putting in the dhokla.
- Check the batter; it will have thickened. Add 1–2 tablespoons of water, a little at a time, until it pours smoothly again.
- Grease the steamer tray well with groundnut oil, covering the base and sides.
- Add the groundnut oil and eno to the batter and mix immediately and thoroughly. Pour straight into the greased tray and spread evenly, keeping it moderately thick.
- Sprinkle black pepper and red chilli powder evenly over the top.
- Put the tray in the preheated steamer and steam for 12–15 minutes, until a knife inserted comes out clean.
- Remove the tray and let the dhokla cool slightly before cutting.
- Chutney: put the coriander, green chillies, ginger, roasted peanuts, cumin seeds, curd, sugar, ice cube and salt in a mixer jar and grind to a smooth, fine chutney. Taste and adjust, then add the lemon juice just before serving.
- Serve the dhokla with the chutney.
