Iraqi Date Cookies That Melt in Your Mouth
Ingredients
- Flour3 ½ cups
- Butter · melted2 sticks
- Yeast½ tsp
- Cardamom · ground1 ½ tsp
- Sugar1 tsp
- Salt½ tsp
- Milk½ cups
- Date2 ½ cups
- Canola oil1 tbsp
- Egg1
Instructions
- Mix the flour, melted butter, instant yeast, cardamom, sugar, salt and warm milk in a large bowl. Combine with a spatula, then with your hands, until the dough comes together. Do not overwork it.
- Cover the bowl and let the dough rest for 30 minutes while you make the filling.
- Remove the seeds from the dates. Blend the dates with the ground cardamom, oil and water until smooth and spreadable. If it is not smooth enough, add one more tablespoon of water.
- Preheat the oven to 350°F and line two baking sheets with parchment paper.
- Divide the dough into 2 pieces. On a floured surface, roll one piece into a thin rectangle, trimming the edges if you like.
- Spread half of the date paste over the dough. Roll it into a log starting from the long side. Slice the log into pieces less than 1 inch wide.
- Repeat with the second piece of dough and the remaining filling.
- Place the cookies on the baking sheets and brush them with egg yolk.
- Bake at 350°F for 20 to 25 minutes, until golden.
