- Puff pastry · frozen2
- Cherry · frozen pitted
- Heavy cream · for brushing½ cups
- Sugar · for sprinkling, for garnish1
- Milk4 cups
- Cornstarch½ cups
- Salt
- Egg8
- Vanilla3 tsp
- Butter · cubed4 oz
Instructions
- Whisk the milk, cornstarch, sugar and salt in a saucepan. Cook over medium heat, stirring constantly, until it starts to thicken.
- Whisk the egg yolks in a separate bowl. Add one ladle of the hot milk mixture slowly while whisking to temper them.
- Pour the yolks back into the saucepan and cook, stirring continuously, for another 2–3 minutes until thick.
- Off the heat, stir in the heavy cream, vanilla and cubed butter until smooth. Transfer to a bowl, press plastic wrap onto the surface and chill completely.
- Preheat the oven to 400°F (200°C). Line two baking sheets with parchment.
- Cut each puff pastry sheet into 5-inch squares. Pipe a thick diagonal line of chilled custard across each square, corner to corner.
- Top the custard line with pitted cherries. Fold two opposite corners over the filling so they overlap and seal.
- Arrange on the sheets, brush with heavy cream and lightly sprinkle with granulated sugar.
- Bake 20 to 25 minutes, until puffed and golden brown. Cool slightly, then dust with confectioners' sugar.
