Ingredients

Instructions

  1. In a large bowl, whisk 2 tablespoons Cajun seasoning with the mustard, hot sauce, buttermilk and eggs until smooth.
  2. Add the shrimp and toss until well coated, then refrigerate for 30 minutes.
  3. Heat oil in a large frying pan to 350°F.
  4. In a casserole-size dish, whisk the flour, cornmeal, remaining 2 tablespoons Cajun seasoning and salt to taste. Taste and adjust the seasoning.
  5. Lift a handful of shrimp from the fridge and toss them in the flour mixture until coated on all sides. Set on a parchment-lined sheet tray and repeat until all are coated.
  6. Fry half the shrimp for 2 to 3 minutes, until golden brown and cooked through. Do not overcook.
  7. Drain the shrimp on a rack-lined sheet tray. Repeat with the remaining shrimp.
  8. Butter the cut sides of the French bread and toast on a flat top or in a pan over low to medium heat until brown.
  9. Layer shredded lettuce on the bottom toasted halves, then add tomato and pickle slices.
  10. Top with as many shrimp as fit, spread mayonnaise or remoulade generously on the top bread slice, and close the sandwich.
