Instructions
- Put 400 g of sugar in a mixing bowl and sift in 100 g of flour.
- Transfer to a medium saucepan over low-medium heat.
- Add 1 litre of fresh milk and 8 egg yolks and whisk to combine.
- Add a few strips of lemon rind, a cinnamon stick and a vanilla bean.
- Stir gently and continuously for 5-10 minutes, until the custard starts to thicken. Remove from the heat.
- Pour the custard through a sieve into a large bowl to remove lumps and the flavouring pieces.
- Press cling film directly onto the surface of the custard, sealing the edges to the bowl, and press gently to remove air bubbles. Refrigerate for a couple of hours to cool.
- Remove the pandoro from its packaging and set the icing sugar aside.
- Lay the pandoro on its side and cut it into 5 slices with a long sharp knife, making the bottom slice slightly thicker.
- Place the bottom slice on a board or serving plate and spread a thick layer of custard in the centre with a spatula.
- Place the next slice on top, off-centre, to start the Christmas tree shape. Spread custard on it and add the next slice. Repeat until the final slice is on top.
- Pipe small amounts of custard onto the star points of the tree.
- Starting from the bottom layer, place a small mint leaf on each custard swirl and add a raspberry on top. On the layer above, put blueberries on the swirls, and repeat until you reach the top.
- Add more custard to the top and decorate with fruit as you like.
- Sift the icing sugar over the top like snow.
