By Vincenzo's Plate · 20 min

Ingredients

Instructions

  1. Bring a large pot of water to the boil, then add a handful of rock salt and stir with a wooden spoon until dissolved.
  2. Check the cooking time on the pasta packet and cook the pasta in the boiling water for only half that time.
  3. Melt the butter in a large frying pan over medium heat, then add the garlic and stir gently. Add chilli flakes here if you like, stirring them in.
  4. Once the garlic starts to brown, pour in half a bottle of Merlot and let it simmer.
  5. Drain the half-cooked pasta and add it to the pan with the wine, then toss well with a wooden spoon.
  6. Add the olives, parsley and half a glass of pasta water, and mix well.
  7. Keep cooking and stirring until the pasta is completely coated in the wine sauce and the cooking time is up.
  8. Finely grate pecorino over the top, toss once more and serve.
