Ingredients

Instructions

  1. In a bowl, mix the grape jam, crushed toasted almonds and grated chocolate very well.
  2. Pile 500g plain flour on a board and make a well in the centre.
  3. Add the egg yolk only to the well and mix with a fork.
  4. Add ½ glass of sunflower oil, then a pinch of sugar and a pinch of salt, and mix well.
  5. Add up to 1 glass of white wine and combine the ingredients with your hands.
  6. Knead for at least 6-8 minutes until the dough forms a ball with a soft, smooth texture; if it is dry and hard, add more white wine.
  7. Pat the ball flat and rest it under a large bowl so no air gets in.
  8. Dust the board with flour, then cut a small piece of dough for the ravioli and keep the rest covered.
  9. Run the piece through the pasta machine on a thick setting 3-4 times, then work down the settings until the strip is thin but not too thin, and smooth.
  10. Spoon small portions of the filling along the bottom half of the strip, a few centimetres apart.
  11. Fold the top half over the filling, sealing around each portion, then cut out the ravioli with a ravioli cutter and set them on a tray.
  12. Repeat with the remaining dough and filling until all is used.
  13. Heat sunflower or vegetable oil in a medium saucepan until warm enough, then fry 5-7 ravioli at a time, turning them gently so they cook through without overcooking.
