Instructions

  1. In a bowl, whisk together the mayonnaise, mustard paste, chopped pickled jalapenos, paprika powder, salt, crushed red chilli, lemon juice and water to make the burger sauce.
  2. Put the water in a bowl, add the onion rings, mix well, then strain and set aside.
  3. In another bowl, mix the all-purpose flour, paprika powder, onion powder (if using), dried oregano and salt.
  4. Coat the onion rings thoroughly with the dry flour mixture.
  5. Heat the cooking oil in a frying pan and fry the onion rings on low heat until golden and crispy.
  6. In a bowl, mix the beef mince, salt, black pepper powder, chopped garlic, chopped pickled jalapenos, soy sauce and 1 tsp cooking oil.
  7. Shape 100 g of the mince mixture into a ball.
  8. Grease a cast iron griddle with the cooking oil and toast the burger buns, then set them aside.
  9. Add the mince ball to the griddle with baking paper and smash it with a patty press. Let it cook until charred on the bottom, then flip, cover with baking paper and smash again.
  10. Place a cheddar slice on the patty, cover and cook on low heat for 1-2 minutes until the cheese melts.
  11. Spread the jalapeno burger sauce on the bottom bun, then add lettuce, the cheese patty, onion rings and more sauce, and close with the top bun. This makes 5 burgers.
