Ingredients

Instructions

  1. Cut the chicken into nugget pieces about 1 inch by 2 inches, toss with salt, dry spices and garlic, cover and refrigerate for 4 to 12 hours.
  2. 30 to 60 minutes before eating, take the chicken out, add the yogurt or sour cream and jalapeño brine, and mix well.
  3. Combine the dry ingredients in a large bowl with another 1/2 teaspoon of salt.
  4. Remove the chicken from the marinade and roll a few pieces at a time in the flour mixture. Skewer each nugget around a jalapeño slice with a toothpick, set on a rack and let sit at room temperature for 20 to 30 minutes.
  5. Heat oil to 350°F in a deep pot, filling it two inches deep.
  6. Fry 3 to 4 pieces at a time for about 4 minutes total, turning once, keeping the oil between 350°F and 370°F, until the outside is deep crisp brown.
  7. Drain on a clean rack rather than paper towels.
