Jam Drops (Thumbnail cookies)
Ingredients
- Butter · softened225 g
- Sugar¾ cups
- Vanilla2 tsp
- Egg1
- Flour2 ½ cups
- Salt¼ tsp
- Raspberry jam½ cups
Instructions
- Preheat the oven to 180°C (350°F) and line 2 trays with baking paper.
- Beat the butter and sugar until creamy, about 1 1/2 minutes.
- Add the vanilla, egg and salt and beat for about 20 seconds until combined.
- Add the flour and beat until no white flour is visible; the mixture will be crumbly.
- Scoop 1 tablespoon of the tightly packed mixture, press it into a dough in your hand, roll into a smooth 3 cm (1.2 in) ball, then flatten into a 1.25 cm (0.5 in) thick disc.
- Use your thumb to make an indent in each disc.
- Place the cookies on the trays about 3.5 cm (1.5 in) apart, making 25 to 28 cookies in total.
- Fill each indent with a slightly heaped 1/2 teaspoon of jam.
- Bake both trays together for 14 minutes, swapping and rotating the trays at the 10-minute mark, until the edges are light golden and the surface is pale golden.
- Cool completely on the tray so the bases finish cooking.
