Jamaican Coconut Rice & Peas (actually, beans!)
Ingredients
- Butter50 g
- Garlic2
- Onion1
- Thyme · dried1 tsp
- Allspice · powder1 tsp
- Bay leaf2
- Scotch bonnet1
- Red bean2 x 400 g
- Coconut milk1 x 400 ml
- Salt1 tsp
- Rice2 cups
Instructions
- Preheat the oven to 200°C / 400°F (180°C fan).
- Melt the butter over medium-high heat in a medium or large ovenproof pot. Cook the garlic, onion, thyme, allspice, bay leaves and scotch bonnet until the onion is translucent, about 3 minutes.
- Add the coconut milk, water, beans and salt. When it reaches a simmer, add the rice and give it a quick stir.
- Once bubbles break the surface, cover the pot straight away and transfer it to the oven.
- Bake for 40 minutes. All the liquid should be absorbed when you tilt the pot.
- Leave the covered pot on the counter for 15 minutes, then fluff the rice and serve.
