Ingredients

Instructions

  1. Drain the jackfruit, rinse well, and press the pieces in a paper towel to squeeze out as much liquid as possible. Shred in a food processor or thinly slice with a knife. For more flavor you may marinate the shredded jackfruit in the spices, herbs and lime juice in the fridge for an hour or overnight, then cook it with water.
  2. Heat 1 teaspoon oil in a skillet over medium heat. Add the shredded jackfruit and all the dry spices, cooking 2 to 3 minutes until the spices smell roasted.
  3. Add the lime juice, water and sugar. Cook partially covered for 25 to 30 minutes, stirring occasionally.
  4. When the mixture is dry, taste and adjust salt and heat. Add the remaining 1 teaspoon oil and roast the jackfruit until some edges turn golden brown.
  5. For the black beans, heat oil in a skillet over medium heat. Add the onion and garlic and cook 4 to 5 minutes, until translucent.
  6. Add the black beans, spices, water and orange or lime juice, and simmer 10 minutes, stirring occasionally.
  7. To assemble, layer the black beans, then cilantro or baby greens, then a generous portion of jerk jackfruit, then cucumber and mango, and season with lemon, salt and pepper. Fold into a burrito and serve.
