- Bread50 g
- Vac-packed chestnuts200 g
- Pork shoulder · trimmed diced1 kg
- Sage1 bunch
- Bacon · smoked3
- Nutmeg · for grating1
- Lemon1
- Clementine1
Instructions
- Preheat the oven to 190°C/375°F/gas 5.
- Peel and quarter the onions, blitz them in a food processor until finely chopped, and tip them into a large bowl.
- Turn the stale bread into breadcrumbs in the processor, add them to the bowl, then crush and crumble in the chestnuts.
- Put the diced pork in the food processor with the sage leaves, roughly chopped, and the bacon, then add 1 level teaspoon of white pepper and a good pinch of sea salt.
- Finely grate in a quarter of the nutmeg, the zest of half a lemon and 2 or 3 gratings of orange or clementine zest. Pulse until some chunks and some mush remain, then tip into the bowl.
- Because the pork is raw, add another pinch of salt and pepper and mix everything thoroughly.
- Set aside just under half of the stuffing for the turkey, then transfer the rest to an earthenware dish.
- Break it up, spread it out and flatten it down, then bake for 50 minutes to 1 hour, until bubbling and crispy.
- Pour off any excess fat before serving if you wish.
