Jamie's Smoked Salmon Frying Pan Pasta | Jamie x Tefal
Ingredients
- Lasagna125 g
- Scallion2
- Spinach80 g
- Smoked salmon60 g
- Lemon½
- Parmesan cheese5 g
- Olive oil
- Cottage cheese1 tbsp
- Extra virgin olive oil
Instructions
- Boil the kettle.
- Cut the lasagne sheets in half lengthways, then into 2 cm strips (use a crinkle-cut knife if you have one).
- Trim and finely chop the spring onions, spinach and half the salmon. Finely grate the lemon zest and the Parmesan, keeping them separate.
- Heat a 28 cm frying pan over high heat. Add a little olive oil, then the spring onions, spinach, chopped salmon and lemon zest.
- Scatter in the pasta, then pour in enough boiling water to just cover it, about 250 ml.
- Simmer for 4 minutes, or until the pasta has absorbed most of the water and forms a nice sauce, stirring often and adding a splash of water if needed.
- Turn off the heat. Squeeze in the lemon juice, stir in the cottage cheese and Parmesan, and season to taste.
- Tear the remaining salmon over the top and finish with a drizzle of extra virgin olive oil if you like.
