- Bread4 slices
- Butter
- Curry130–140 g + 1 packet
- Onion100 g
- Garlic1 tbsp
- Ground pork120 g
- Carrot · grated170 g
- Pt water400 ml
- Garam masala⅔ tsp
- Oil1 tbsp
Instructions
- Heat the oil in a frying pan over medium heat, then sauté the onion and garlic until the onion is soft and semi-translucent.
- Add the mince and cook, breaking it up, until it turns whitish with no lumps.
- Add the diced carrot and sauté for about 30 seconds, then add the grated carrot and sauté for about 1 minute.
- Add the water and bring to a boil. Lower the heat and simmer for 8 to 10 minutes.
- Break the curry roux into blocks along the lines, add them to the pan and stir gently until blended.
- Cook for about 5 minutes until thick and sticky with no liquid left at the bottom of the pan.
- Stir in the garam masala, then remove from the heat.
- Spread the filling flat on a small tray and mark it into 8 equal portions. Freeze any filling you will not use, in blocks, in a zip-lock bag.
- Heat a jaffle maker. Lightly butter one side of each slice of bread.
- Put half the filling on an unbuttered slice, cover with a second slice with the buttered side up, and repeat for the second pair.
- Cook the sandwiches in the jaffle maker until it indicates they are ready, then cut each into 2 triangles and serve hot.
