Ingredients

Instructions

  1. Rub the 30 grams of ginger and 1/4 teaspoon of salt onto both sides of the 400 grams of pork rib chops. Cover and refrigerate for at least 1 hour.
  2. Mix 2 tablespoons of sake, 2 tablespoons of soy sauce and 1 tablespoon of honey in a bowl to make the sauce.
  3. Pat the pork chops dry with paper towels and scrape off any large clumps of ginger.
  4. Dust both sides of the pork with a thin, even layer of 1 tablespoon of potato starch.
  5. Preheat a frying pan over medium heat. Add 1 tablespoon of vegetable oil and the pork chops, and fry until the underside starts to brown, about 2 minutes.
  6. Flip the chops and fry the second side until golden brown, about 2 more minutes.
  7. Flip the chops back over, wipe out as much excess oil from the pan as you can with a paper towel, then turn the heat up to high.
  8. Pour in the sauce and keep flipping the chops in the boiling sauce until they are coated in a thick, shiny glaze.
  9. Serve whole or rest for a few minutes before slicing, and garnish with chopped scallions.
