Ingredients

Instructions

  1. Warm a small pan on medium-low heat until warm, not hot. Add 1 Tbsp extra virgin olive oil, ¼ tsp crushed red pepper and 1 minced or crushed garlic clove. Sauté gently for about 2 minutes until fragrant but not browned.
  2. Stir in 3 Tbsp ketchup until combined.
  3. Season with ⅛ tsp Diamond Crystal kosher salt (or half that of table salt) and ⅛ tsp freshly ground black pepper, stir, then transfer to a bowl to cool.
  4. Cut 3 slices of shokupan (¾ inch / 1.5 cm thick) with a bread knife if not already sliced.
  5. Thinly slice ⅛ sweet onion and ⅛ green bell pepper. Cut 4 cherry tomatoes into three slices each. Cut 3 slices of ham into thin short strips.
  6. Optionally cut each bread slice in half diagonally for children, then rejoin the halves so they look like one slice.
  7. Spread about 1 Tbsp of sauce on each slice and sprinkle with a small pinch of mozzarella.
  8. Scatter the onion, green pepper and ham over the slices, add the tomato slices, then sprinkle about 2 Tbsp of mozzarella over each.
  9. Place the bread directly on the middle rack of a toaster oven, keeping toppings off the edges. Toast at 450°F (230°C) until the edges brown and the cheese melts, about 10 minutes. Place a tray underneath to catch drips if desired.
  10. Serve hot, with extra red pepper flakes if you like.
