Zubereitung
- Warm a small pan on medium-low heat until warm, not hot. Add 1 Tbsp extra virgin olive oil, ¼ tsp crushed red pepper and 1 minced or crushed garlic clove. Sauté gently for about 2 minutes until fragrant but not browned.
- Stir in 3 Tbsp ketchup until combined.
- Season with ⅛ tsp Diamond Crystal kosher salt (or half that of table salt) and ⅛ tsp freshly ground black pepper, stir, then transfer to a bowl to cool.
- Cut 3 slices of shokupan (¾ inch / 1.5 cm thick) with a bread knife if not already sliced.
- Thinly slice ⅛ sweet onion and ⅛ green bell pepper. Cut 4 cherry tomatoes into three slices each. Cut 3 slices of ham into thin short strips.
- Optionally cut each bread slice in half diagonally for children, then rejoin the halves so they look like one slice.
- Spread about 1 Tbsp of sauce on each slice and sprinkle with a small pinch of mozzarella.
- Scatter the onion, green pepper and ham over the slices, add the tomato slices, then sprinkle about 2 Tbsp of mozzarella over each.
- Place the bread directly on the middle rack of a toaster oven, keeping toppings off the edges. Toast at 450°F (230°C) until the edges brown and the cheese melts, about 10 minutes. Place a tray underneath to catch drips if desired.
- Serve hot, with extra red pepper flakes if you like.
