Instructions

  1. Put all ingredients except the dry yeast into the bread pan, add the yeast to its dispenser, and run the bread machine on the dough setting.
  2. Lightly oil a large bowl, shape the dough into a ball and place it in the bowl. Cover and proof in a warm place (40°C/104°F) for 30 minutes, or until doubled or tripled in size.
  3. Check the dough with a floured finger: if the hole stays, it is ready; if it springs back, proof longer; if it shrinks, it is over-proofed but still usable for donuts.
  4. Punch out the air on a floured surface. Divide into 10 equal pieces and quickly roll each into a ball. Place on a baking sheet, cover and rest for 10 minutes.
  5. Roll one piece into a rope. Roll the two ends in opposite directions, fold in half, and let it twist into 3–4 twists. Press the ends together to seal.
  6. Place each donut on parchment paper, cover and proof in a warm place (40°C/104°F) for 20 minutes, or until doubled.
  7. Deep fry in oil at 170°C (338°F) until golden brown. Toss in a bag with granulated sugar to coat.
