Ingredients

Instructions

  1. Cut the beef into strips about 5mm thick, 1cm wide and 5cm long. If using short ribs, trim the fat and cut the meat off the bone, then halve each piece lengthwise and slice 5mm thick.
  2. Put the beef in a bowl with the marinade ingredients and mix. Leave it for about 15 to 20 minutes.
  3. Mix the sauce ingredients in a very large bowl.
  4. Cook the sweet potato noodles per packet directions (about 8 minutes in boiling water). Drain, rinse briefly under tap water, shake off excess water well, and add to the sauce bowl. Do not mix.
  5. Heat 2 tbsp oil in a 30cm non-stick pan over high heat. Cook the onion, white part of the green onion and mushrooms with 1/2 tsp salt for 2 1/2 to 3 minutes, stirring constantly, until just softening but not golden. Pour over the noodles. Do not mix yet.
  6. In the same pan on high heat, heat 1 tbsp oil. Cook the carrot and capsicum for 1 1/2 minutes, stirring constantly. Add the spinach, green onion greens and the remaining 1/2 tsp salt, and cook for 1 1/2 minutes until the spinach wilts. Transfer to the noodle bowl. Do not mix yet.
  7. In the same pan on high heat, heat the remaining 1 tbsp oil. Cook the beef for 1 1/2 minutes until very lightly golden and just cooked through. Add to the noodle bowl. Do not mix yet.
  8. Add most of the sesame seeds, then toss everything well. Transfer to a serving bowl, sprinkle with the remaining sesame seeds, and serve warm.
