JB's Banana Bread
Ingredients
- Flour2 ¼ cups
- Baking soda1 tsp
- Salt½ tsp
- Cinnamon · powder1 ¼ tsp
- Allspice · powder¼ tsp
- Banana4
- Brown sugar1
- Egg2
- Sour cream⅓ cups
- Butter80 g
- Vegetable oil⅓ cups
- Vanilla2 ½ tsp
Instructions
- Preheat the oven to 180°C/350°F (160°C fan), with the rack set so the loaf sits in the middle.
- Scrunch a 40 cm / 16 in sheet of parchment into a loaf pan measuring 21.5 x 11.5 x 7 cm / 8.5 x 4.5 x 2.75 in, leaving overhang on the sides.
- Whisk together the flour, baking soda, salt, cinnamon and allspice until well combined.
- Mash the bananas in a large bowl until mostly smooth, then measure out 1 3/4 cups.
- Add the brown sugar, eggs, extra egg yolk, sour cream, melted butter, oil and vanilla to the bananas and whisk until combined.
- Pour the dry ingredients into the wet and fold gently with a spatula until just incorporated; a few flour lumps are fine.
- Pour the batter into the prepared pan and smooth the surface.
- Bake for 70 minutes, turning the pan halfway, until a skewer inserted in the centre comes out clean.
- Cool in the pan for 10 minutes, then lift out onto a wire rack and cool for an hour before slicing.
