Ingredients

Instructions

  1. Put the chicken in a large baking dish in one layer, sprinkle with the BBQ seasoning and toss to coat. Cover and refrigerate overnight or up to 24 hours.
  2. Set the oven racks to the top and bottom levels. Clip two medium metal binder clips 12 to 14 inches apart in the center of the top rack, facing each other with the handles hanging down. Preheat the oven to 325°F.
  3. Heat a small cast-iron skillet on the stove until searing hot. Add 2 cups dry cherry wood chips and let them smolder and smoke.
  4. Take the chicken from the refrigerator and drizzle the stock and olive oil over it.
  5. Leaving the kielbasa linked, lightly prick each link with a skewer or knife tip. Drape the links over a 16-inch-long, 1/4-inch-thick wooden dowel.
  6. Put the baking dish in the center of the bottom rack, directly under the binder clips. On the top rack, slide the ends of the dowel through the clip handles so the sausages hang above the dish. You can instead lay the sausages directly on the center of the top rack.
  7. Put the skillet of smoking chips on the bottom rack next to the baking dish.
  8. Bake until the chicken is very tender, about 1 hour 15 minutes. Remove the sausage and chicken. Shred the chicken with two forks and taste for seasoning. Put it in a large bowl and drizzle with the remaining juices from the dish. Slice the kielbasa on the bias into 1-inch pieces and put in a bowl.
  9. Build the tower with the chicken, kielbasa, BBQ sauce, corn, sweet rolls, pickles and other sides.
