- Onion150 g
- Green bean100 g
- Carrot70 g
- Maitake mushroom70 g
- Flour80 g
- Sparkling water½ cups
- Salt
- Lemon½
Instructions
- Pour 1.5 to 2 inches of vegetable oil into a deep, heavy-bottomed pot and heat to 355°F (180°C). Line a wire rack with several layers of paper towels.
- Toss the 150 g onions, 100 g green beans, 70 g carrots, 70 g maitake mushroom and 80 g cake flour together in a bowl until the vegetables are coated in flour.
- When the oil is hot, add the 1/2 cup cold club soda to the vegetables and fold gently with chopsticks until the flour is just distributed. Some unmixed lumps are fine.
- Shape a scoop of the vegetables and batter into a patty on a wide spatula.
- Slide the patty from the spatula into the oil, then repeat to make more fritters.
- Fry until crisp on one side, flip and crisp the other side, about 5 minutes in total.
- Drain well as you lift each fritter out, and place it on the prepared rack.
- Serve on paper with sea salt and lemon wedges.
