Kali Chaudas Jowar Vada Diwali Food Preparation
Ingredients
- Flour3 ½ cups
- Urad dal · powder paste¾ cups
- Fenugreek · powder¼ cups
- Oil½ cups
- Yoghurt½ cups
- Jaggery¼ cups
- Ginger paste2 tbsp
- Chili powder4 tsp
- Baking soda1 tsp
- Turmeric · powder2 tsp
- Garam masala1 tbsp
- Dhana Jiru Powder cumin coriander powder1 tbsp
- Salt1 tbsp
- Warm Water more or less depending on batter consistency2 cups
- Asafoetida¼ tsp
- Peanut oil
Instructions
- If you have no ready fenugreek powder, dry-roast whole fenugreek seeds, stirring often, until they just begin to change colour and smell aromatic. Let them cool. Grind them with ½ cup of dry urad dal into a coarse powder and set aside.
- Melt the jaggery in a little warm water and set aside.
- In a big wide bowl, mix the regular wheat flour, coarse wheat flour, jowar flour and the fenugreek/urad powder.
- Add the red chilli powder, dhana jiru, garam masala, salt, green chilli and ginger paste, asafoetida, turmeric and baking soda. Mix well.
- Add the yogurt, oil and jaggery water to the flour and mix well.
- Add warm water a little at a time, mixing into a thick batter (usually about 2 cups; more or less depending on the flours). It should be thicker than cake batter. Mix with your hands.
- Cover tightly and leave somewhere warm to ferment for 8–12 hours. In summer, place it in the sun; in winter, put it in an oven with only the light on. Do not turn the oven on.
- Soak ¼ cup of urad dal in warm water for about 30 minutes. Grind it with little or no water to a thick paste.
- Add the urad paste to the fermented batter and mix well. Taste and adjust salt and spice; add water if the batter has become too thick. It should still be thicker than cake batter.
- Heat oil for deep frying (peanut oil preferred) over medium heat, or just above.
- Carefully drop in small balls of batter, smaller than golf balls. Turn them several times until all sides are golden brown. Lift onto paper towel.
- Once cool enough to handle, break one in half. The vada is done when the inside is cooked, the batter does not stick to your finger, and it has a net-like texture. If it is undercooked, mix in 1 tbsp of hot oil at a time and test again.
- Fry the rest the same way. Store in a brown paper bag to absorb extra oil.
