Modo de preparo
- Marinate the chicken thighs in the marinade mixture for at least 3 hours, ideally 24 hours in the fridge.
- Mix the sauce ingredients in a bowl and rest for at least 20 minutes.
- If making chips, bake or fry them, season with salt, and keep warm in a 100°C / 200°F oven.
- BBQ: preheat to medium-high and cook the chicken 3 to 4 minutes per side until deep golden with slightly charred edges.
- Stovetop: heat a large non-stick pan over medium-high heat with no oil, cook the chicken in batches 3 to 4 minutes per side until deep golden and cooked through to an internal temperature of 72°C / 162°F, wiping the pan between batches.
- Rest the chicken on a tray, loosely covered with foil, for 3 minutes, then slice into 1 cm / 0.4" pieces.
- Warm the pita: microwave stacked on a plate for 45 seconds to 1½ minutes on high, or on the stove brushed with water and heated in a lightly oiled non-stick pan for 1 minute per side over medium-high, without crisping.
- Spread 3 tablespoons of sauce down the middle of each pita, add chicken, lettuce and tomato on one side, sprinkle with red onion, add chips, drizzle with more sauce, then fold and wrap in foil.
