Instructions

  1. Preheat the oven to 350°F/177°C. Line the bottoms of three 8-inch cake pans with parchment paper, leaving the sides ungreased.
  2. Whisk the eggs on high speed for 4 to 6 minutes, until fluffy, voluminous and pale. Add the vanilla and coffee extracts and whisk for 30 seconds more.
  3. In a separate bowl, combine the almond flour, granulated erythritol, baking powder and cocoa powder. Sift these dry ingredients into the eggs in three small additions, folding gently but thoroughly after each.
  4. Fold in the melted coconut oil last, very gently, for about 30 seconds; it does not need to be fully mixed in.
  5. Divide the batter evenly among the three pans, spreading it to the edges with an offset spatula. Bake for 17 to 19 minutes, until just set, with a glossy, bubbling top.
  6. Cool the layers on a rack for about 15 minutes, then run a knife around the pan edges, invert the cakes, peel off the parchment and cool completely. Handle with care, as the layers are fragile; a split layer is fine.
  7. Whisk the softened butter on high speed for 4 to 5 minutes, scraping the bowl often, until light, fluffy and almost white.
  8. Mix in the powdered erythritol on the lowest speed for about 1 minute, then whisk on high for 2 to 3 more minutes until light and fluffy. Add the strawberry extract and sugar-free preserves and whisk up to 30 seconds until combined. Pipe about 1 1/2 cups of buttercream into a pastry bag with a star tip.
  9. Spread a medium amount of buttercream on the first layer. Pipe a barrier ring along the edge, fill the inside with 1 cup diced strawberries, and press them gently into the buttercream.
  10. Repeat with the second layer, then top with the third. Frost the top and sides, apply a crumb coat, chill for at least 10 minutes, then add the final frosting. Garnish with dollops of the remaining buttercream and fresh strawberries. Refrigerate for up to 3 days.
