Ingredients

Instructions

  1. Preheat the oven to 350°F (177°C). Line a 9-inch square pan with parchment, leaving overhang on the sides.
  2. If using full graham crackers, crush them into fine crumbs in a food processor, blender, or zip-top bag. Mix the crumbs with the sugar, then stir in the melted butter until it is thick and sandy. Break up any large chunks and press into the bottom of the lined pan.
  3. Bake the crust for 10 minutes, then cool for a few minutes.
  4. Beat the softened cream cheese on medium-high speed until smooth, about 1 minute. Beat in the egg yolks, scraping down the sides as needed. Beat in the sweetened condensed milk, key lime juice and lime zest until combined. Give the filling a final hand-whisk to remove any lumps from the bottom of the bowl.
  5. Pour the filling evenly over the warm crust.
  6. Bake for about 18-20 minutes, until the edges are set and the centre is only slightly jiggly.
  7. Cool at room temperature on a wire rack for 30 minutes, then refrigerate for at least 2-3 hours.
  8. Lift the bars out using the parchment and cut into squares. Garnish as you like with whipped cream and lime slices.
