- Rice2 cups
- Beef stock · powder½ tbsp
- Scallion5
- Bacon10 oz
- Kimchi10 oz
- Vegetable oil1 tbsp
- Butter1
- Egg6
- Chili pepper · flakes1 ½ tbsp
- Soy sauce1 tbsp
- Oyster sauce1 ½ tbsp
- Toasted sesame oil½ tbsp
- Sugar1 tsp
Instructions
- Rinse the rice several times, drain, then soak it in cold water for 30 minutes.
- In a container, dissolve the Korean beef stock powder in the 2 cups of water and set aside.
- Thinly slice the green onions, keeping whites and greens separate. Cut the bacon into thin strips.
- Chop the kimchi into bite-sized pieces, put it in a bowl, and mix in the gochugaru, soy sauce, oyster sauce, sesame oil and sugar. Set aside.
- In a large nonstick pot, heat the oil over medium-high heat. Add the bacon and cook 5 to 6 minutes, until golden brown. Pour off excess fat, leaving 2 to 3 tablespoons.
- Add the seasoned kimchi and the white parts of the green onions. Sauté 3 to 4 minutes, until the kimchi has wilted.
- Add the drained rice and stir for 1 minute. Pour in the seasoned water and bring to a boil, stirring now and then so the rice does not stick.
- Once boiling, lower the heat to low and simmer for 15 minutes. Turn off the heat, keep the lid on, and let it steam for 10 more minutes.
- Sprinkle over the green onion tops, add the butter or sesame oil, then fluff and mix well. Serve with fried eggs if using.
