  1. Rinse the rice several times, drain, then soak it in cold water for 30 minutes.
  2. In a container, dissolve the Korean beef stock powder in the 2 cups of water and set aside.
  3. Thinly slice the green onions, keeping whites and greens separate. Cut the bacon into thin strips.
  4. Chop the kimchi into bite-sized pieces, put it in a bowl, and mix in the gochugaru, soy sauce, oyster sauce, sesame oil and sugar. Set aside.
  5. In a large nonstick pot, heat the oil over medium-high heat. Add the bacon and cook 5 to 6 minutes, until golden brown. Pour off excess fat, leaving 2 to 3 tablespoons.
  6. Add the seasoned kimchi and the white parts of the green onions. Sauté 3 to 4 minutes, until the kimchi has wilted.
  7. Add the drained rice and stir for 1 minute. Pour in the seasoned water and bring to a boil, stirring now and then so the rice does not stick.
  8. Once boiling, lower the heat to low and simmer for 15 minutes. Turn off the heat, keep the lid on, and let it steam for 10 more minutes.
  9. Sprinkle over the green onion tops, add the butter or sesame oil, then fluff and mix well. Serve with fried eggs if using.
