- Mirin1 tbsp
- Salt
- Black pepper
- Butter1 tbsp
- Garlic · chopped3 cloves
- Scallion · chopped2
- Kimchi1 ½ cups
- Onion · sliced½
- Oyster sauce1 tbsp
- Chili flake · flakes1 tbsp
- Noodle · cooked2

Instructions
- Put the pork belly, mirin, salt and pepper in a bowl and marinate for 5 to 10 minutes. Skip this if using bacon.
- Melt the butter fully in a large skillet over medium-low heat. Add the garlic and green onions and let them infuse the butter for 2 to 3 minutes.
- Turn the heat up to high, add the marinated pork and cook until the edges turn golden brown, about 2 to 3 minutes.
- Add the kimchi, onion, fish sauce or oyster sauce and gochugaru (or paprika). Stir-fry until the kimchi and onion soften, about 3 to 4 minutes.
- Push the kimchi and pork to the edges to make room, then add the noodles. If using fresh pre-cooked noodles, pour in 1 to 2 tablespoons of water to loosen them. Stir-fry for about 2 minutes until the noodles are fully cooked and everything is combined.
- Move to a plate and top with perilla leaves or green onions.
