- Ramen noodle5 oz
- Sweet corn · frozen1 cup
- Japanese mayonnaise¼ cups
- Garlic · minced1 tbsp
- Sugar2 tbsp
- Black pepper · ground½ tsp
- Kimchi · minced2 tbsp
- Butter2 tbsp
- Mozzarella cheese · shredded1 ½ cups
- Scallion · thinly sliced¼ cups
Instructions
- Boil the noodles in a medium pot of water over high heat, following the package directions. Drain them, keeping ⅓ cup of the cooking water.
- Set an oven rack to the top position and turn the oven to broil.
- In a medium heatproof bowl, combine the frozen corn, mayonnaise, sugar, garlic and pepper. Microwave for 2 minutes, or until the corn has thawed.
- Put the noodles in a medium heatproof bowl. Add the reserved cooking water, the spice packet and the kimchi, and stir with chopsticks until evenly combined.
- Melt the butter in an 8-inch cast iron skillet over medium-low heat, tilting the pan so the bottom is coated. Spread the noodles in an even layer, spoon the corn mixture over them, then sprinkle on the mozzarella. Take the pan off the heat.
- Place the skillet in the oven and broil for about 5 minutes, until the cheese starts to brown. Turn the pan if one side browns faster than the other.
- Scatter the scallions over the top and serve.
