Korean Steamed Pear (Baesuk) 배숙
Ingredients
- Asian pear2
- Peppercorn2 tbsp
- Honey0.83 cups
- Date4
- Cinnamon stick1
Instructions
- Remove the seeds from the jujube dates and slice or chop the flesh.
- Cut a cap off the top of the pear, including the stem. Hollow out the centre, including the seeds and a good amount of surrounding flesh, leaving walls about 3/4 inch (2 cm) thick so the pear stands upright.
- Place the pear in a steamer. Fill the hollow with peppercorns, the scooped-out pear pieces, the jujube pieces and honey, then replace the cap.
- Steam in a pressure rice cooker on the STEAM setting for 30 minutes, or in a pot steamer on the stovetop for about 1 hour, until the fruit is very soft.
- For the simmered version, peel the pear, remove the seeds and cut it into slices.
- Put the pear slices, honey, peppercorns and, if using, cinnamon stick and jujube dates into a pot.
- Bring to a boil, then simmer for 15-20 minutes until the pear looks translucent and the liquid has reduced noticeably.
- Remove from the heat. Take 1-2 teaspoons for lingering coughs.
