Kuih Kapit (Love Letter Crepes)
Ingredients
- Egg3
- Sugar⅔ cups
- Coconut milk5 oz
- Rice flour¾ cups
- Flour⅓ cups
- Vegetable oil¼ cups
Instructions
- Heat the Kuih Kapit irons on a gas grill or over charcoal until hot.
- Beat the eggs and sugar on low speed until the sugar dissolves, about 1 to 2 minutes.
- Add the coconut milk and beat for 30 seconds.
- Add the rice flour and all-purpose flour and beat until smooth.
- Strain the batter into a deep bowl.
- Open a hot iron and brush both inner faces with an oiled cloth. Ladle batter onto the lower face, letting excess drip back into the bowl; the batter should sizzle.
- Close the iron, latch it, and cook on the grill for 1 to 2 minutes in a warm climate or 2 to 3 minutes in a cold climate. Flip and cook 1 minute in a warm climate or 2 minutes in a cold climate. Times are approximate.
- Scrape off excess batter, then open the iron to check. If pale, close and grill 1 to 2 minutes more, watching so it does not burn.
- When the crepe is even golden brown, release it with a butter knife onto the folding surface.
- Fold into a half circle, then in half again into a triangle quickly, and press the lower half with a tin lid or coaster until set.
- Cool the folded crepes, then store them in an airtight jar or tin. Repeat with the remaining batter.
