Lace Cookies
Ingredients
- Butter½ cups
- Brown sugar⅔ cups
- Almond flour¾ cups
- Salt¼ tsp
- Corn syrup1 tbsp
- Vanilla1 tsp
- Chocolate · melted½ cups
Instructions
- Melt the butter in a medium saucepan over low heat. Once melted, add the brown sugar, almond flour, salt and milk or corn syrup. Cook and whisk until the sugar dissolves and everything is combined, about 3 to 4 minutes. If the butter separates, take the pan off the heat and whisk hard until it comes back together.
- Remove from the heat and whisk in the vanilla. The mixture will be grainy and shiny. Let it sit and thicken for 5 to 10 minutes while the oven preheats.
- Preheat the oven to 350°F (177°C). Line 2 to 3 large baking sheets with parchment or silicone mats.
- Drop scant teaspoons of dough, spaced 3 inches apart, onto the sheets. Bake 6 to 8 minutes, until golden brown around the edges. The cookies will sizzle and bubble as they bake.
- Let the cookies cool on the sheets for 5 minutes, then move them to a rack to cool completely. They crisp up as they cool.
- Once cool, spread Nutella or melted chocolate on the bottom of one cookie and sandwich it with another, if you like.
