Ingredients

Instructions

  1. Put the lamb in a bowl with the lemon juice, salt, ginger garlic, curry powder, chili powder, garam masala and coriander leaves. Mix well, cover and set aside.
  2. Blend the tomatoes, carrots, red bell pepper and ½ cup water or broth until smooth.
  3. Heat the ghee or oil in a pot, add the star anise, cinnamon and onions, and sauté 8 to 9 minutes until translucent.
  4. Deglaze with 2 tablespoons water. Add the lamb and sear over medium-high heat for 6 to 7 minutes.
  5. Add the pureed vegetables and cook covered over medium heat for about 25 minutes.
  6. Add up to ½ cup hot water or broth in batches as needed, then cook covered until the lamb is tender, about 1 hour 10 minutes, stirring every 10 to 15 minutes to prevent burning.
  7. Stir in the tamarind and sugar. Taste and adjust the salt, curry powder and garam masala. The dish should be hot, spicy and tangy.
  8. Sprinkle with coriander leaves and serve hot.
