Ingredients

Instructions

  1. Preheat the oven to 180°C (350°F). Grease a 23 cm (9-inch) square pan and line it with baking paper.
  2. In a large bowl, beat the eggs, sugar and vanilla until light and fluffy.
  3. Sift in the flour and baking powder and mix just until combined. Add the melted butter and mix until combined.
  4. Pour into the pan and bake for 25 minutes, or until a skewer inserted in the centre comes out clean.
  5. Cool in the pan for 10 minutes, then turn out and cool completely.
  6. For the icing, mix the melted butter and milk in a large bowl. Sift in the cocoa powder and icing sugar and mix until smooth.
  7. Once the cake is chilled, trim the edges and cut it into squares. Put the desiccated coconut in a bowl.
  8. Dip each square into the chocolate icing, turning to coat well, and let it drain. Then coat it in the coconut and place on a wire rack.
  9. Refrigerate until set, about 15 minutes.
