Ingredients

Instructions

  1. Preheat the oven to 375°F. Cook the noodles in salted water until al dente, drain, then cover with cold water to stop cooking and prevent sticking.
  2. In a deep pan over medium-high heat, cook the ground beef until no longer pink, breaking it up (about 2 minutes). Add the onion and cook until softened (3 minutes).
  3. Add the garlic, 1 tsp salt, 1/2 tsp pepper and 1/2 tsp oregano and sauté for another minute. Add the marinara, bring to a simmer, then turn off the heat.
  4. Spread 1/2 cup of meat sauce over the bottom of a casserole dish.
  5. In a large bowl, stir together the ricotta, egg, 1/4 cup Parmesan, 1 1/2 cups mozzarella and 1/4 cup parsley.
  6. Lay the noodles in a single layer on a large baking sheet. Spread 1/4 cup of cheese mixture over each noodle, add a heaping tablespoon of meat sauce in a strip down the centre, then roll up and place in the casserole dish.
  7. Spread the remaining meat sauce over the roll-ups and sprinkle with the remaining 1 1/2 cups mozzarella. Cover with foil without letting it touch the cheese.
  8. Bake covered at 375°F for 40 minutes. Remove the foil and broil for 2-3 minutes until the cheese is lightly golden. Garnish with parsley.
