- Saltto taste
- Turmeric · powder¼ tsp
- Chili powder1 tsp
- Bottle gourd 1 sized
- Mango powderto taste
- Garam masalaa pinch
- Fenugreek · roasted powdera pinch

Instructions
- Wash the chana dal and soak it for at least 5 to 6 hours or overnight.
- Heat the ghee in a pressure cooker on high.
- Add the cumin seeds and onions and cook over high heat, stirring, until the onion turns translucent. Add the ginger-garlic-green chilli paste and cook for a minute.
- Add the tomato, salt, turmeric and red chilli powder, stir well, then add the drained dal and the diced bottle gourd. Larger dice hold their shape better after cooking.
- Add water to just below the level of the dal and gourd, cover and pressure cook on high for 1 whistle, then 3 more whistles on medium.
- Switch off the heat and let the pressure release naturally.
- Open the lid, turn the heat back on, and stir in the dry mango powder (optional), garam masala and roasted kasuri methi. Cook for 3 to 4 minutes, then taste and adjust the seasoning.
- Add hot water and simmer if you want a thinner dal, then stir in the fresh coriander and serve.
